The two secret weapons in the recipe are sour cream and temperature control. Sour cream provides tanginess and keeps the inside nice and moist. Control your temperature throughout the recipe, and you’ll prevent the donut from absorbing too much oil while creating that lovely, crisp exterior…
If you don’t have sour cream then you can substitute it with:
For 1 cup of sour cream substitute as follows
》》7/8 cup buttermilk or sour milk plus 3 tablespoons butter.
》》1 cup yogurt plus 1 teaspoon baking soda.
》》 3/4 cup sour milk plus 1/3 cup butter.

- 2 1/4 cups cake flour all purpose flour or 2 cups flour +1/4cups cornstarch
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup sugar (100 grams)
- 2 tablespoons butter (29 grams) , at room temperature
- 2 egg yolks large
- 1/2 cup sour cream (113 grams)
- 1 1/2 cups sugar confectioners'
- 4 tablespoons cocoa powder
- 2 tablespoons milk water or

- In a bowl, sift together the cake flour, baking powder, salt.
- In the bowl beat the butter and sugar together until sandy. Add the egg yolks and mix until light and thick. Add the dry ingredients to the mixing bowl in 3 additions, alternating with the sour cream. The dough will be sticky. Cover with plastic wrap and chill for 1 hour.
- On a floured surface, roll out the dough to about 1/2 inch thickness. Use a doughnut cutter or two differently sized biscuit cutters to cut out as many donuts as possible, dipping the cutters into flour as necessary to prevent sticking.
- Fry the doughnuts a few at a time, being careful not to overcrowd the pot. Fry on each side about 2 minutes, being careful not to let them burn.
- Sift together the sugar and cocoa powder in a medium bowl. Slowly stir in the milk and vanilla, a little at a time, to make a smooth, pourable glaze.
- Then dip the doughnuts in glaze and keep in for 2 minutes and serve..
